When I’m not studying, I spend my time interning as a public relations intern and the DSU University Marketing & Communication office. I have a passion for cooking, baking and crafting! If you’re looking for a fun summer morning activity, Pancakes & Puzzles may be just the thing for you! Below are three creative pancake recipes that are inspired by Dixie State. These recipes aren’t your typical pancake recipes and will definitely impress anyone you serve them to!
Trailblazer Pride Pancake Cereal
Ingredients:
Pancake mix of choice
Red & blue food coloring
Maple syrup
Butter
Instructions:
Make your classic pancake batter and then separate it into two bowls.
Add your red food coloring into one bowl and your blue food coloring into the other.
Heat a nonstick skillet over medium-high and spray with oil or add butter.
Pour the two batters into plastic Ziplock bags and begin piping small dots of the pancake batter.
Cook for one to two minutes or until the edges look dry and set, flip halfway through.
Serve immediately in a bowl with butter and syrup!
Healthy Raging Red Velvet Pancakes
Pancake Ingredients:
1 cup oat flour
½ cup whole wheat flour
2 Tbsp ground flax seed
1 tsp baking soda
¾ tsp baking powder
Pinch of salt
1 ½ Tbsp cocoa powder
1 tsp red food coloring
2 egg whites
1 ½ cup club soda or milk of choice
“Cream Cheese” Glaze Ingredients:
3 Tbsp plain greek yogurt
1 tbsp powdered sugar
1-2 Tbsp milk of choice
Instructions:
Heat pancake griddle or skillet to medium heat and lightly oil with cooking spray.
In a large bowl, mix all the pancake ingredients together, but be careful not to over mix.
Begin cooking the pancakes until the batter is used up.
To make the frosting, stir together yogurt, powdered sugar and milk until smooth.
Drizzle frosting or maple syrup over hot pancakes and serve!
Brooks’ Lazy Sheet Pan Pancakes
Ingredients:
4 cups Bisquick pancake mix
4 large eggs
1 cup sliced strawberries
1 cup blueberries
Maple syrup
Instructions:
Make your pancake batter and then let it sit for a few minutes.
Spray a baking sheet well with baking spray or add butter and flour.
Heat your oven to 425 ºF.
Pour pancake batter evenly into the baking sheet and add the strawberries and blueberries.
Bake for 15 minutes the brush on some melted butter before serving.
